After draining some free run, the pump is hooked up, creating a vacuum in an intermediate carboy, which will then start drawing wine from your Fermentor. This method of pressing is extremely gentle, and has no risk of over extraction, as the maximum achievable pressure will be that of the atmosphere (~14 psi). The Vacuum Press Kit can be used with any
